How to Cover the Jar During Fermentation

Do not seal an actively fermenting kombucha brew with the included lid because primary fermentation needs airflow. Cover the mouth with a breathable coffee filter or our unbleached cotton muslin covers secured by a rubber band. This allows airflow while helping keep out bugs and unwanted contaminants. Use the included lid when the jar is being used for storage or transport.

Why Use a 1-Gallon Jar?

A 1-gallon brew is a practical home-brewing size. After reserving about 2 cups of starter tea for the next batch, one gallon generally provides enough kombucha to fill a standard six-pack of 16-ounce flip-top bottles for second fermentation, with a little variation based on fill level.

Can I ferment kombucha with the plastic lid in place?

No. Primary fermentation requires airflow, so use a breathable cover and rubber band. The BPA-free lid is intended for storage or transport.

What can I use these jars for?

These jars are extremely versatile.  We have heard success stories from customers using them for kombucha, kefir, sun tea, limoncello, grain storage, seed storage, beet kvass, granola, nut storage and countertop or fridge storage for foods such as flour, sugar, pasta, and cereal.


Why Glass?

Our gallon glass jars were made with kombucha home-brewing in mind.  Glass is highly recommended and safest for kombucha brewing due to the acidic nature of kombucha.  Glass jars will not react with kombucha as can happen with metal containers.  Glass is also ideal for kombucha fermentation as it does not have the potential to leach unsafe chemicals as plastic containers are known to do.
