Do You Need Bottles in Your First Kit?

Primary fermentation takes place in the covered brewing jar. Second fermentation happens after that, when you transfer the brewed kombucha into suitable bottles, add your chosen flavorings, and allow carbonation to develop.

Do You Need a Kombucha Heat Mat?
Consider the actual spot where your jar will sit, not just your thermostat setting. A kitchen shelf and a cooler downstairs room can offer very different brewing conditions.
If that space regularly falls below about 70°F, especially during winter, the Deluxe Kit with Heat Mat is worth considering. It includes the brewing setup and bottles, plus a wraparound heat mat with a dial to adjust the warmth. Use the included thermometer to monitor the jar as conditions change.
If your brewing space already stays comfortably around 70°F or slightly warmer, the standard Deluxe Kit is a straightforward choice. The heat mat is an option for cooler spaces, not something every beginner needs.
Can You Use a Jar You Already Own?
Yes. The Starter Kit Without Jar is designed for that situation.
For the best fit with our ingredients, covers, and instructions, use a 1-gallon glass jar matching the standard size and shape of the jars in our kits. Check that the opening can be fully covered and the cover secured snugly. An unusually wide or narrow vessel may not work as well with the supplied covers.
Thoroughly cleaning and sanitizing the jar before brewing is crucial to a successful batch. A jar that looks clean is not necessarily ready to use, especially if it previously held food or has been sitting in storage. Clean it thoroughly, sanitize it using a method suitable for food-contact glass, and follow the sanitizer’s directions, including any rinsing requirements. Start with a jar free of food residue and cleaning-product residue.

The Basic Kit is for someone who wants the jar, fresh culture, and instructions but prefers to supply their own brewing tea and sugar. It does not include a thermometer or pH strips.
The Complete Kit adds first-batch tea and sugar, a cotton tea bag, and monitoring tools. For a beginner without supplies at home, that makes it the simpler primary-fermentation option.
Neither includes bottling equipment. Choose based on what is already in your cupboard—not simply which kit has the lower price.
